1h and shield is not necessary.
I soloed those bosses on my fighter and he was 25 SPR rest STR with a +9'ed axe.
It depends on if your a cs user or not I guess. If your not I suggest pure end
and if you can an enhanced 1h + shield or pure end with an enhanced axe.
If you have acess to CS gear, I suggest pure str or 25 spr rest str, and any weapon will probably be fine.
To help you also try and get enhanced armour, and armour with end/dex on it.
