Let's see:
Fighters have, as you probably guessed, high strength and endurance. Their problem is SP...they have way too little SP and they die fast against magic.
Clerics are less powerful, but they have the ability to heal. They also have considerably higher SP, and have the most skills. Has pretty much a 1:1 HP/SP ratio, and are very, very hard to kill.
Archers are considered underpowered...but this isn't really true. An archer can dodge a lot of hits, and are strong DOT (damage over time) as opposed to DPS (damage per second.) Their HP:SP ratio is pretty similar to clerics.
Mages are strong, doing twice as much damage as the other classes in a shorter time frame. Their problem: Getting 2-hit by higher level monsters. Also, the majority of high level players are mages.
Ultimately, it's up to you. If you like solo'ing, a mage is probably your best bet. If you like to party up with people...then a cleric.
Keep in mind that a cleric can, regardless of build, play as a support cleric.

I think clerics are a good starter character. Being able to heal yourself is a bonus when you're starting off with no money. Fiesta doesn't let you get rich very easily.
There isn't much customization with character's faces and hairstyles, I'm afraid. They might be releasing CS items for that, who knows.
Try the Wiki we have here if you have any problems. We have guilds for quite a bit of stuff. I haven't actually used the tutorial thing they have in there before, so I would have no idea if it'll be good enough. I'm guessing it's probably good - better than nothing anyway.
Oh and keep your scroll material drops. (When you pick up an item, just roll your mouse over it, and if it says Scroll Material, then keep it! Especially the ones called Summoned Beast Leather (Low Quality).. they are rare-ish). Scrolls are something you need in game a lot later on, and you might go into Scroll Production (you can read about that in Wiki) so it'll be good to keep those drops. xD
Oh and you can't restat in game yet... so be careful of what you put in.

I think I'll start off as an archer then. I had looked around a bit before joining, and was leaning towards one anyway! XD
This is in many games, but it won't hurt to ask... They have to buy their arrows, right? Are they expensive?
Thank you for your reply. :3
Edit: Ah, so many quick replies!
Right, I'll keep all of what you said in mind. <3
Thanks for more replies! :3
