One hand fighters use a pure endurance build and I'll give you a cookie, two hand fighters go pure spirit and I"ll give you a two handed cookie.
Haven't been on my fighter since forever, but those are the builds I wanted to try out. The point of two handed sword wielders is to dish out damage, that's why you sacrifice the shield, and SPR is the best for this. I don't recommend any endurance for a two hand fighter, as you won't benefit from the block.
The point of a one handed sword fighter, in my opinion, is to absorb damage. That's why you wield the shield as well. I've also heard that the miss chance with the one handed sword is considerably lower as well (as this weapon has higher aim than the 2H weapons). Although accuracy in this game doesn't seem to be a practical stat, so dexterity isn't really necessary on a fighter.
