You never realized this? I think someone even mentioned the benefits of incremental rewards when we were all starting on ESO.

Well, I obviously knew about video game addiction, but I never thought that people working there would actually sit down and go: "Hmm, now how do we make the game more addicting?" They even got scientific research done there.

Well... its not so much they want you addicted. But they want you drawn in and driven to keep playing so they can keep making money.
I think people who start to consider it just as worthy as real-life accomplishments are those who do lack great responsibilities and goals in real-life, such as kids, teens, and 20somethings, and thus are the ones most prone to the "addiction". I wouldn't even call it an addiction..
In my WoW guild, we got a lot of different players. I noticed the most mellow members are the ones that have families, wives, kids, etc. While the ones who get all riled up and actually take the game seriously are the teens and college student aged members.

About the Frost emblems:
You can only get 2 per day from doing a random dungeon. And there is a weekly raid quest to get 5. Also, a raid called the Vault of Archevon will award 2 for killing the strongest boss (you can get a total of 4, 2 from 10 man, and 2 from 25 man) (If you can do the highest difficulty current raid, the bosses do drop Frost emblems as well). But, for most people, the max they can get per week is 23. You need at least 4 pieces of the Tier 10 set to get the best bonus. If you got the 4 cheapest pieces, you'd still need 310 frost emblems.
This would take about 13.5 weeks to gain all the needed emblems.
To get all of the set pieces, you need 405, or an additional 4.1 weeks of getting frost emblems.
Looking at it from that perspective, it is pretty unbelievable.

That's why I don't make it much of a goal to gain my frost armor on WoW. And like you said... for all of that, asap, they'd have to play their asses off for 3 months... at least D: WoW is pretty bad at making it so you have to be elitist and best of the best to function in that game =/ well, in the end game.
