I'm still using just 1 bar on the bottom for all my characters.

I usually have Item Pickup set to 2/F2 or whatever the default location is. As for the skills, I arrange them in order of when i got them for now, but when I run out of room on that one bar, I may change the order. Slot 1 goes to what I expect to use the most overall. Things on the left are used more often than the things on the right. Pots were there by default so I left them there, and I usually set such items to that side of the bar anyways.
