In Sydney we do have a huge variety of cuisines, we don't talk about "do we eat chicken, beef or fish today?" we ask "do you want chinese, japanese, thai or mexican tonight?"
Real Ramen are not the package stuff. They're noodles made by the chef, and they also prepare their own soup/broth with pork bones or chicken for hours...
I believe there are some shops (in Japan) where their broths are something that's been cooking for years.. everyday they use the soup for customers then add water and more pork bones and keep boiling to keep the flavours up...
As a result, every ramen is different from different shops.
