As for class, Gladiator has the best DMG since they're the only ones benig able to use axes, but for DEF, hands down It would be a Knight, the extra defense from the shield makes it so.
Alot of Gladiators will be complaining about Knights in PvP though, saying its not fair they get to use a shield for the extra defense that gladiators will obviously lack. Hence no gladiators will PvP against Knights due to the huge defense disadvantage.

What will be the solution?u think they will make it normal liek able to use everything?and btw Can gladiators use the warrior gears like the shields?
