Since you're full END, I assume you want to be a tanker? If you wanna be a tanker, then generally you would go with a one handed sword and shield so you get more defense.
Axe is for damage builds where you have more STR, and two handed is more of a hybrid, I think.
I don't play a fighter myself but I think that's the general idea. Though you might want to wait for someone with more expertise in fighters because I might be wrong. xD
