I wanted to upgrade my bb8520 from software 4.6 to 5.0 and RIM software download page says choose from your service carrier

I bought the phone from Mobily and my sim card from zain. Which one is my service carrier? They both appear on the list. I read on the internet that if you miss things up your phone is fucked up...

I would say your service provider/carrier is the one that your phone connects to in order to make calls, etc, the one who made the phone is the phone manufacturer.
So I'd say the one you baught the sim card from, although personally I'd google it and do a bit of further research before you click.

Wouldn't it be easier to ask someone from Zain or Mobily? I'd just give 'em a call.

Phone guy: Welcome to zain, blablablabla. Well, It looks complicated since you have two in a phone(wtf!?) I don't know actually. I don't recommend updating so you don't screw ur phone.
