When you catch a pokemon, does it apply EV's?

No. Only if you kill it and gain EXP.
The only exception is with things like calcium and Carbos.

Alright. Just asking cos I'm trying to raise the perfect special attack charizard, and I need a pokemon to help me through the main game xD

Any tips on a team set up?

Not really, themed teams only work if your bored and have a a plan to counteract their similar weaknesses.
You always need a wall or two on your team, a lead is recommended to start off the battle but if you want to get a feel for it look at some narrated battle videos online.

I have actually defeated OU teams with my NU team...
