HP and SP

When I die, I get sent back to town and my HP and SP go WAY down, like to 76 and 103... why is this?

You died and went back to town.

Operative word being died. So I assume you wake up from unconsciousness and aren't restored to full-HP because you are in a weakened state.

Or let's use a lame Pokemon example.

Your SP remains the same as when you died
Your HP goes UP (since you die at 0) to about 30-40%.

Thanks... I figured out why it went down so low, and that was because of a buff that was on my character... >.<

Yeah, Endure is removed when you die/the one-hour mark.
