Eh? Have you never played a game where they only took down one inhibitor to win?

I've played in games where only one inhib was taken down to win.

But in most games, if we've taken down two inhibs, and one of them respawns, the respawned one usually gets killed again before we kill nexus. That's the difference I'm talking about.
