the one hand style was meant to symbolize the recklessness of Kenpachi's personality. It was what defined his character. Him agreeing to learn, and moreover, actually use proper kendo in battle was quite a leap in his character development.

Grimmjaw vs. Ichigo was really stretched out imo. Finally he released and they just kept sniping at each other for a long time. The only thing that saved the whole thing was the interesting back-story of how Grimmy became an Arrancar.
